Sensational sugar-free, gluten-free vegan brownie!

This sugar-free, gluten-free, egg-free, dairy-free brownie calls for freedom! Freedom from sugar addiction, exhausting glucose level drops and chronic fatigue. It may not seem a mouthwatering dessert for sugar-eaters (sorry guys:)), however, healthy eating is like this.

About the main ingredients

You may find a big variety of brownie recipes online. Traditional brownie consists of butter, lots of sugar, eggs, and (wheat) flour. Keto brownies are based on eggs and artificial sweeteners like erythrol. Our brownie is different! It is processed sugar free, artificial sweeteners free, eggs free and wheat flour free!

Surprisingly, the main ingredients of our SENSATIONAL VEGAN BROWNIE are chickpeas, plums and aquafaba (the liquid leftover from cooked or canned chickpeas).

Most interestingly that although this brownie is processed sugar-free and unsweetened, it is still very tasty!

Prunes (or dried plums) for brownie

Prunes are known to increase satiety, improve bowel movements (reduce constipation) and have a low glycemic index.

Glycemic index (GI) for one serving of prunes (60 grams, or about 6 prunes) is around 30. For note: fruits with the glycemic index lower than 50 are considered as fruits with low glycemic index.

Generally, GI 70–100 is considered as high; 55–70 as moderate; and GI below 50 is low.

Chickpeas for brownie

Chickpeas have complex natural sugars which break down slowly thus do not raise glucose level spontaneously (as processed sugar does) and improve bowel movements too.

Chickpeas are also the great source of fiber, protein, and minerals, such as folate, manganese, iron, phosphorus and magnesium.

About the recipe

I was inspired by the recipe on The Whole Food Plant Based Cooking Show which is called Oil Free Vegan Brownies, but have changed and added some ingredients for better texture and taste.

For my version, I have changed dates to plums (because dates are already a Number 1 choice in mostly any of sugar-free desserts and I wanted to make it different).

I also added aquafaba, because it can replace whole eggs in baked goods. Well, if we already use cooked chickpeas that is a sin not to add some aquafaba for fluffy texture of brownie!

I have also changed oat flour to chestnuts flour (considered gluten-free) because of the same reason as for dates – oats get already a dominant position in almost all gluten-free recipes.

The last thing which I have changed is a way of baking. For short baking (up to 30 min) I use fan mode, not a conventional mode, and therefore reduce the temperature by 20 °C or 70 °F. Fan (convection) mode allows hot air to circulate around the oven. Therefore, using fan mode, the outside of brownie bakes faster and browns more evenly, leaving the interior still juicy.

Ingredients

plums250 g1 1/2 cups
unsweetened peanut butter280 g1 cup
chestnut flour 60 g1/2 cup
cocoa powder75 g3/4 cup
baking powder1/2 tsp1/2 tsp
baking soda 1/2 tsp1/2 tsp
vanilla bourbon powder (optional)1 tsp1 tsp
cooked chickpeas 300 g2 cans
liquid from a can with chickpeas to make aquafaba 50-100 ml1/4-1/2 cup

Directions

  1. Preheat oven to 150 C / 300 F (fan mode)
  2. Soak dried plums for 30 min in some amount of water, then drain
  3. Add all ingredients (except the liquid from chickpeas) to a food processor and mix until smooth
  4. Whip the liquid from chickpeas using a hand or stand mixer for 5-7 min, you will get the aquafaba whipped cream
  5. Add aquafaba gently to the mixture, mix well using a spoon
  6. Press into a silicone pan or a parchment paper lined brownie pan
  7. Bake for 30 minutes, then let it sit in a pan for 15 min. Cut into square pieces and serve or take it to the mountains!

This sugar-free, gluten-free brownie could be called “a brownie for an ascetic” or “a brownie for an athlete”, because it contains only nutritionally rich ingredients and no junky ingredients at all.

It has dense texture, rich taste and gives a feeling of satiety after eating just one or two pieces! Enjoy!!!

Best reviewer writes about this book: Dr. Alisa Palatronis has “cooked up” a very interesting cookbook! I am intrigued by the ingredient choices for some recipes and can’t wait to try them all! My palate is anticipating them all. I did try a few right away since I had the ingredients on hand. The Mascadates from Bożena and Almonds in Heaven were very tasty! I also tried the Hello Hasselback Potato too, they were delicious!! My next recipe will be Delights from 1001 Nights for a sweet treat since I love chickpeas.
