Icy almonds

It is something like ice-cream, but different. Vegan, vegetarian, paleo, maleo, whatever you call it – it is tasty:)

Ingredients:

  • almonds, 1 cup
  • fresh water for soaking
  • fresh water for blender mixing, ratio 1:1 with soaked almonds
  • cane sugar, 2 tsp
  • vanilla extract, 0.5 tsp

How to make it:

  • Soak almonds overnight for 8-12 hours
  • Drain and rinse
  • Measure the amount of soaked almonds and use the same amount of water to blender these two ingredients. For example, you have 1.5 cups of soaked almonds, that means you take 1.5 of water to blender
  • Blender almonds with water on medium-high speed for 2 minutes
  • Drain the mixture through cotton cloth or milk-bag
  • Pour the liquid into a large pot. Large pot is better, even while we have small amount of liquid, because it has bigger surface area of a bottom and therefore simmer process will be faster and even
  • Add sugar and vanilla
  • Simmer the liquid in a large pot for 1 hour, mixing it time to time with a whisk. Heat should be as low as possible! No hurry here!
  • Liquid will start to thicken, so keep on simmer until you will get very thick creamy consistency
  • Remove a pot from heat and cool creamy mixture down
  • Transfer the creamy mixture to ice-cube moulds and freeze. It is ready!
